Try this version of GRILLED AUBERGINES for a truly TASTY side dish! π

INGREDIENTS
2 eggplants
Parsley
1 clove of garlic
30ml (2 tbsp) of white wine vinegar
Salt
80ml (1/2 cup) of extra virgin olive oil
Dry tomatoes
Chilli peppers
METHOD
1. Cut the eggplants into the slices and transfer them to the grill pan. Grill on both sides.
2. In a food processor add the parsley, garlic, white wine vinegar, salt and extra virgin olive oil and mix.
3. Place the half of eggplant slices on the serving plate and sprinkle with marinade. Add the dry tomatoes and chilli peppers.
4. Repeat the process with the marinade, dry tomatoes and chilli peppers. Decorate with mint leaves and serve.
