Potato medallions: cheesy and tasteful!

An easy and quick dinner idea that the whole family will love!

INGREDIENTS
700g boiled potatoes;
200g mozzarella;
100g (3.5 oz) ham;
4g (1 tsp) pepper;
20g (2 tbsp) starch;
3 eggs;
Breadcrumbs.

METHOD
  1. Mash the boiled potatoes. Add mozzarella, starch and pepper.
  2. Stir well and leave to cool for 30 minutes.
  3. Fill the medallions with mozzarella and ham.
  4. Roll the medallions twice in beaten eggs and breadcrumbs, then fry in hot oil. Serve.
