Potato medallions: cheesy and tasteful!

An easy and quick dinner idea that the whole family will love!
INGREDIENTS
INGREDIENTS
700g boiled potatoes;
200g mozzarella;
100g (3.5 oz) ham;
4g (1 tsp) pepper;
20g (2 tbsp) starch;
200g mozzarella;
100g (3.5 oz) ham;
4g (1 tsp) pepper;
20g (2 tbsp) starch;
3 eggs;
Breadcrumbs.
METHOD
- Mash the boiled potatoes. Add mozzarella, starch and pepper.
- Stir well and leave to cool for 30 minutes.
- Fill the medallions with mozzarella and ham.
- Roll the medallions twice in beaten eggs and breadcrumbs, then fry in hot oil. Serve.
