Roasted Cheesy Potatoes

Ingredients:
750g New Potatoes
1 Tbsp Salt
50g Melted butter
2 Chopped Garlic Cloves
1 Tsp oregano
1Tbsp Chopped Rosemary
100g Grated Mozzarella
30g Grated Parmesan
1 Tsp Salt
1 Tsp Pepper
Parsley to garnish
 
Instructions:
Par-boil the potatoes with the tablespoon of salt until just soft, 12-15 minutes.
Place on baking tray and cover with melted butter, garlic, oregano and rosemary, salt and pepper then mix well,
Take a jar or cup and squash the potatoes until they break.
Sprinkle with both types of cheese.
Bake at 190°C 425°F for 15min.
Sprinkle with Parsley .
