Cheesy Mashed Potato Pancakes

INGREDIENTS:

4 cups mashed potatoes
2 cups shredded mozzarella
2 eggs
1/2 cup flour
2 tbsp chopped chives
Salt and pepper to taste
1/2 cup bread crumbs
Oil for frying

METHOD:

Combine together all ingredients (except for bread crumbs and oil) into homogeneous mixture.
Take an ice cream scoop and make dough balls.
Using your hands shape pancakes out of the balls and roll in bread crumbs.
Fry the pancakes for couple of minutes on each side.
Serve this great snack with sour cream.
