Mashed potato baskets: too good not to try!

These mashed potato baskets are a tasty and fun recipe. Sometimes all you need are few ingredients to make something unique and tasty. Here are the ingredients you’ll need: 500g boiled potatoes, 1 egg, salt, pepper, parsley, 50g of Parmesan cheese, and 50g of butter. Mix together the potatoes, the egg, and the seasonings, if the mixture is too thick add a little milk. Put the mixture in a piping bag, make a filled-in circle with the mixture (this will be the base of the basket). Now, pipe two rings around the base you just made, these will be the sides of the baskets. If they don’t turn out perfectly you can use your hands to fix them. Bake for about 10/15 minutes. After you have removed them from the oven, fill them with provola cheese and pancetta, sprinkle with some Parmesan cheese, and bake for 10 more minutes.
