Potato baskets stuffed with mushrooms: perfect as a tasty appetizer!

INGREDIENTS
800g of potatoes
20g of butter
1 egg
80g (1 cup) parmesan
Salt
Pepper
Olive oil
200g of mushrooms
Salt
Pepper
Cheese
METHOD
1. Peel and cut the potatoes into small pieces and transfer them to the pot with the boiling water. Let them boil for 30 minutes.
2. Transfer potatoes to the bowl and mash them well. Add the butter, egg, parmesan, salt, and pepper and mix to combine. Fill the piping bag with the mixture.
3. Arrange paper cups on a tray covered with parchment paper and form the potato baskets. Bake in oven at 180Β°C/360Β°F for 15 min.
4. In a pan add the olive oil and mushrooms and let them cook until they are soft. Season with salt and pepper and mix. Remove from the heat.
5. Remove the paper cups from the potato baskets and fill them with the prepared mushrooms and cheese. Bake in oven at 180Β°C/360Β°F for 8 more minutes.
6. Serve potato baskets on a serving dish and enjoy.
