Mushroom stuffed potato cakes: they are delicious not to try!

INGREDIENTS:
800 gr of potatoes
Extra virgin olive oil
300 gr of champignon mushrooms
1 clove of garlic
Parsley
200 gr of flour (add more flour as needed)
50 g parmesan cheese
1 egg
100 gr of provola
Salt to taste.
Pepper as needed.
 
METHOD
  1. Store mushrooms, garlic, salt, pepper, parsley and saute in olive oil in a frying pan covered with a lid.
  2. Knead the cooked potatoes, add the flour, parmesan, salt and pepper and mix everything in a fine paste.
  3. Roll out the dough, scoop out the medallions. Fill them with prepared mushrooms and grated cheese.
  4. Bake on the pan each side for 10 minutes. Sprinkle medallions with parsley and enjoy.
