Stuffed potatoes cakes: cheesy and easy to make!

Delicious cold or hot, this recipe is a must try!

INGREDIENTS
• 800g potatoes
• 300g mushrooms
• 200g flour
• 50g Parmesan cheese
• 100g provola cheese
• 1 egg
• 1 clove garlic
parsley
vegetable oil
salt
pepper
 
METHOD
  1. In a pan, fry the garlic with two tablespoons of oil, then add the mushrooms, salt, pepper, cover with a lid and cook for 10 minutes. Add the parsley and cook without a lid.
  2. Mush boiled potatoes with a fork and add parmesan, egg, salt, pepper and mix.
  3. Put the dough on a work surface (add more flour if necessary) and roll it out with a rolling pin, then make discs with a cup or glass.
  4. In one of the potato disks, place a spoonful of mushrooms in the center and add provola cheese, cover it with another potato disk and seal the edges. Continue until all ingredients have been consumed.
  5. Cook in a pan with a small amount of oil for 5 minutes on each side.
