How to make cheesy and delicious baked potatoes

INGREDIENTS
9 potatoes
Extra virgin olive oil
1/2 onion
1 clove of garlic
Parsley
Salt
Pepper
260g of mozzarella
METHOD
1. Peel the top of the potato and cut it into cubes, being careful not to cut it all the way to the bottom. Transfer to the pot with water and boil for 15 minutes.
2. Arrange the potatoes on the baking tray covered with parchment paper and transfer them to the oven. Bake at 190°C/374°F for 35 minutes.
3. In a small bowl add the extra virgin olive oil, onion, garlic, parsley, salt, and pepper and mix to combine.
4. After time has elapsed remove the potatoes from the oven and pour the prepared marinade on top. Transfer to the oven and bake at 190°C/374°F for 20 minutes.
5. After 20 minutes arrange the mozzarella cubes on the potatoes and transfer to the oven. Bake at 190°C/374°F for 10 more minutes.
6. Serve on a serving dish and enjoy.
