POTATO NESTS: an appetizer so delicious you'll want to make it every week!

INGREDIENTS
620g potatoes
1 egg
70g butter (melted)
70g (1/2 cup) Parmesan
Pepper
Salt
100g cheese
100g speck
METHOD
1. Place the potatoes in a pot with cold water and bring to a boil. Cook for 30 minutes, then remove from the heat.
2. Peel the potatoes and mash them in a bowl. Add the egg, melted butter, Parmesan, salt, and pepper, and mix with a spatula until combined.
3. Transfer the potato mixture into a piping bag and pipe two overlapping circles onto a baking tray lined with parchment paper. Bake at 180°C/360°F for 20 minutes.
4. Fill the potato nests with cheese and speck. Bake again at 180°C/360°F for 5 minutes to melt the cheese.
5. Serve the potato nests all together on a serving dish and enjoy.
