Sweet potato sticks: crunchy, delicious and appetizing!

INGREDIENTS
1 medium (around 200g) sweet potato
100g (¾ cup) all-purpose flour
20g (1 ⅔ tbsp) sugar
50g (¼ cup) butter
Egg wash
METHOD
1. Steam sweet potato until softened (around 20 minutes). Let cool down slightly and peel.
2. Mash potato with butter, flour, and sugar.
3. Transfer a smooth mixture into a plastic bag and smooth it out to form an even square.
4. Freeze the mixture for 40 minutes, carefully remove the bag and cut the frozen potato mixture into sticks.
5. Transfer potato sticks onto a baking sheet covered with parchment. Brush with egg wash and bake for 20 minutes at 180°C/350°F.
