DORAYAKI: JAPANESE RED BEAN JAM PANCAKES!

INGREDIENTS
For the red beans paste:
170g of red beans
90g (1/2 cup) of sugar
 
For the pancakes:
2 eggs
80g (1/2 cup) of sugar
1 tbsp of honey
130ml (1/2 cup) of water
90g (3/4 cup) of flour
8g (1/2 tbsp) of baking powder

METHOD
1. Add the beans in a saucepan with the sugar and cook over low heat, stirring with a spatula until the beans break up. Crush the beans well with the spatula until obtain a jam.
2. To prepare the mixture add the eggs and sugar and whisk to dissolve the sugar well. Add the honey, water, flour, and baking powder and whisk to obtain lumps free mixture.
3. Take the mixture with the ice cream spoon add to the lightly greased pan and start forming the pancakes. Cook for 2-3 minutes per side.
4. Put a spoonful of red bean jam in the center of a pancake and cover with another pancake. Seal them by pinching the edges.
5. Serve them all together on a serving dish and enjoy.
