VEGETARIAN LASAGNA: STRINGY and TASTY, you won't be able to do without it! 🥕🍄

INGREDIENTS
Extra virgin olive oil
1 onion
160g of mushrooms
160g of peas
2 zucchini
3 carrots
350g of cauliflower
Salt
500ml of béchamel sauce
Lasagna sheets
140g of parmesan
260g of mozzarella
METHOD
1. In a pan add the extra virgin olive oil, onion, mushrooms, peas, zucchini, carrots, cauliflower and cook for a few minutes. Season with salt and cook until all become soft.
2. On a baking dish add a few spoons of béchamel sauce and spread it out. Place a lasagna sheet, add a couple of spoonfuls of béchamel sauce, the cooked vegetables, parmesan, and mozzarella. Repeat the process 5-6 times.
3. Transfer the baking dish to the oven and bake at 180°C/360°F for 30 minutes.
4. Cut the slice of the lasagne after baking and serve.
