ASPARAGUS IN PUFF PASTRY: for a delicious aperitif!

INGREDIENTS
500g of asparagus
10-12 slices of prosciutto crudo
1 roll of puff pastry
Sesame seeds
1 egg yolk
METHOD
1. Trim the tough ends of the asparagus. Tie them together with string and immerse them, up to the tips, in boiling water for 5 minutes; the tips will cook in the oven.
2. Cut the puff pastry into strips about 2 cm wide. Once the asparagus is cooked and slightly cooled, wrap each spear first in prosciutto, then in puff pastry. Repeat for each asparagus.
3. Arrange the wrapped asparagus on a baking sheet, brush with the beaten egg yolk, and sprinkle with sesame seeds.
4. Bake at 180°C (350°F) for 20 minutes, or until golden brown.
