PUFF PASTRY TARTLETS: They're so easy to make, you'll want to make them every week!

INGREDIENTS
1 roll of puff pastry
Cherry tomatoes
Extra virgin olive oil
Salt
90g of feta
50g of anchovies in oil
METHOD
1. Unroll the puff pastry on a working surface and cut out discs using a pastry cutter.
2. Place the puff pastry discs in a muffin tray and prick the bottoms with a fork. Bake at 180°C/360°F for 12 minutes.
3. Cut the cherry tomatoes into pieces and transfer them to a small bowl. Add extra virgin olive oil and salt, and mix to combine.
4. Fill the tartlets with feta, cherry tomatoes, and anchovies in oil. Serve them all together on a serving dish and enjoy.
