This recipe is so irresistible!
INGREDIENTS
INGREDIENTS
3 large potatoes, boiled, peeled;
150 g (5 oz) flour;
1 egg;
30 g (1 oz) shredded parmesan;
Sliced ham and cheese;
Flour, egg, breadcrumbs for coating.
METHOD
- Puree 3 boiled potatoes and mix them with flour, egg and parmesan. Season with salt and pepper.
- Divide potato mixture in half and roll between two oiled sheets of parchment.
- Layer ham and cheese over one of the layers and cover with another one.
- Cut into 4 squares and shape them with oiled hands.
- Dredge each potato squire in flour, coat in egg and pass through breadcrumbs.
- Fry potato squires for 5-6 minutes (around 3 minutes per side) over medium-low heat until golden and crunchy.
