MSEMEN: Moroccan flaky bread to enjoy for breakfast or as a snack!

INGREDIENTS
520g (4 cups) of all-purpose flour
120g (1 cup) of durum wheat flour
12g (1 tbsp) of sugar
2g of fresh yeast
420ml (1 3/4 cups) of water (lukewarm)
14g of salt
120ml (1/2 cup) of sunflower oil
5g of baking powder
Durum wheat flour
 
METHOD
1. In a bowl, add the all-purpose flour, durum wheat flour, sugar, fresh yeast, water, and salt, and mix. When the dough starts to form, knead it to obtain a compact and smooth dough. Cover the bowl with cling film and set aside for 15 minutes.
2. After the time is up, transfer the dough to the working surface and split it into 12 pieces. Form the balls (around 110g each) and transfer them to a tray. Cover with cling film and set aside for 15 minutes.
3. In a small bowl, add the sunflower oil and baking powder and mix to combine.
4. Grease the working surface with the oil, place a ball on the greased surface, and roll it out with your hands. Brush the surface and fold it to get a rectangular shape.
5. Brush the rolled dough with more oil/baking powder mixture and sprinkle with durum wheat flour. Fold the dough into thirds, then fold again into thirds to form a square.
6. Transfer the square to the hot pan, turning it several times, until cooked through, crispy on the outside, and golden in color.
7. Serve the msemen together on a serving dish and enjoy.
