APPLE BRIOCHE: beautiful and with a delicious center!

INGREDIENTS
For dough:
340g (2 3/4 cups) of all-purpose flour
5g of dry yeast
120ml (1/2 cup) of milk
60ml (1/4 cup) of vegetable oil
1 egg
80g (1/2 cup) of sugar
Zest of 1 orange
3g salt
For the filling:
50g raisins
Vanilla essence
2 apples
40g of butter
25g (2 tbsp) of sugar
1/2 lemon (juice)
1 tsp of cinnamon
For decoration:
2 cinnamon sticks
Honey
Mint leaves
METHOD
1. In a mixing bowl, add the all-purpose flour and dry yeast and mix.
2. In a small bowl, add the milk, sunflower oil, egg, sugar, and orange zest and whisk to combine.
3. Pour the egg mixture into the mixing bowl and mix with a spatula. Add the salt and, when the dough starts to form, knead it with your hands to obtain a compact dough. Oil the dough and bowl and cover with cling film. Let it rise for 3 hours.
4. In a small bowl, add the raisins, vanilla essence, and water and set aside for a few minutes.
5. Peel and slice the apples, then cut them into small pieces.
6. In a pan, add the butter and let it melt. Add the apple pieces, sugar, lemon juice, and cook until soft. Add the cinnamon and raisins and mix to combine. Remove from the heat and let it cool.
7. After the dough has risen, transfer it to the working surface and divide it into 12 equal pieces (about 45g each).
8. Take each piece, flatten it with your hands, and roll it out. Add the apple filling in the center, close well, and form a ball.
9. Transfer them to the muffin tray and cover with a cloth. Let them rise for 50 minutes.
10. After 50 minutes, take a cinnamon stick and stick it in the center to make the shape of an apple. Transfer to the oven and bake at 180°C/360°F for 15 minutes.
11. Brush them with honey after baking and decorate with mint leaves. Serve the apple brioche on a serving dish and enjoy.
