FRIED CARNIVAL ROSES: a touch of sweetness for the holidays!

INGREDIENTS
150g (1 cup) of all-purpose flour 
1 egg
1 tablespoon of sugar
1 tablespoon of sunflower seed oil
1 tablespoon of vanilla extract
A pinch of salt
½ lemon (zested)
 
Pastry cream (as needed)
Powdered sugar (as needed)
Egg whites (for brushing)
Candied cherries (for serving)
 
METHOD
1. In a bowl, crack the egg and add the sugar, sunflower seed oil, vanilla extract, lemon zest, and a pinch of salt. Begin mixing with your hands.
2. Gradually add the flour, a little at a time, while continuing to mix.
3. Once the dough comes together in the bowl, continue working it until it has a smooth, homogeneous consistency.
4. Wrap the dough in plastic wrap and let it rest for at least 30 minutes, which will make it easier to roll out.
5. After the resting time, roll out the dough very thinly using a rolling pin on a floured surface.
6. Using two flower-shaped cookie cutters, one larger and one smaller, cut out the same number of large and small flower shapes from the dough.
7. Brush the centers of the large flower shapes with egg white and attach the small flowers on top, rotating them slightly. Then, with your finger, press gently in the center of the flower to form a little “rose.”
8. Fry the “roses” in hot oil, turning them occasionally. Fry until golden and crisp. Once done, remove them and place them on a paper towel to drain.
9. Arrange the fried roses on a serving tray, and using a piping bag, add a nice swirl of pastry cream to the center of each one.
10. Dust with powdered sugar and add candied cherries.
