INGREDIENTS
- 16 g (0.5 oz) flour;
- 1/3 cup milk;
- 200 g (7 oz) flour;
- 10 g (0.3 oz) sugar;
- 1 tsp dry yeast;
- ¼ cup milk;
- 1 tsp oil;
- 1 tsp matcha powder.
METHOD
- Combine 16 g of flour with 1/3 cup of milk and heat in the microwave, whisking from time to time, until the paste is smooth and thick. Let cool down covered with plastic.
- Meanwhile dissolve some sugar in warm milk and sprinkle yeast on top. Set aside for 10 minutes.
- Pour warm milk and a little bit of vegetable oil into 200 g of flour and knead together. Add cooled down pasta and continue knitting until the dough is smooth.
- Cover the dough and set aside for 1 hour.
- Cut the dough in half and knead one half with matcha powder to make it green. Set aside for 1 hour more.
- Roll each part of the dough into a rope and cut into pieces. Set aside for 30 minutes.
- Roll out each piece and layer 4 of them (2 green and 2 white) overlapping on a working surface.
- Using leftover dough form one elongated piece that is thicker in the middle (use video for reference).
- Place this piece on one side of the row and roll dough pieces together. Cut in half and form rose bud on a piece of parchment paper, gathering the bottom and bending back petals.
- Steam roses for 20 minutes.
