Steamed buns: fluffy, delicious and without oven!

INGREDIENTS

300ml (1 1/4 cup) warm water;
5g (2 tsp) dry yeast;
5g (1 tsp) salt;
500g (4 cups) all-purpose flour;
10g (2 tsp) sugar;
50g (½ cup) chopped scallions;
80ml (⅓ cup) hot vegetable oil;
6g (2 tsp) sesame seeds;
5g (1 tsp) salt.
METHOD
- Whisk flour with salt, make a well in the center and pour warm water in. Add sugar, yeast and set aside for 5 minutes for the yeast to activate.
- Combine yeast mixture with flour and knead the dough for 10 minutes.
- Cover the dough and set aside for 1 hour to double in size.
- Pour hot oil over chopped scallions, mix and add salt. Leave to cool down.
- Knead the proofed dough and roll it out into a rectangle 1-1 ½ cm thick.
- Cover with scallion oil and fold 3 times.
- Cut into 9 pieces, dust each with four generously and wrap using a chopstick as shown on the video.
- Place buns in stem baskets and set aside for 20 minutes. Steam for 30-35 minutes. Serve hot.
