Wholemeal buns: the secret to make them fluffy and delicious!

We promise these will be the softest 100% whole wheat buns you've ever had – and they are easy to make with this complete step-by-step tutorial!

INGREDIENTS
 375 g (13.2 oz) whole wheat flour;
 125 g (4.4 oz) all-purpose flour;
 12.5 g (0.4 oz) fresh yeast;
 ½ tsp salt;
 ½ tsp sugar;
 350 ml (12.3 fl.oz) warm water.
 
METHOD
  1.  Combine both types of flour with salt. Make a well in the center and pour some warm water into it. Add sugar and crumbled yeast into the water, whisk and leave to bubble up.
  2.  Knead the dough until it is smooth and slightly sticky. Cover and set aside for around and hour.
  3.  With oiled hands form the dough into a log on semolina sprinkled work surface. Cut the log into 9 pieces and roll each into a bun.
  4.  Place buns on a parchment-covered baking sheet and spray with water. Top with sesame, oats, semolina or any other toppings of your choice (flour, poppy seeds etc.).
  5.  Leave to rise for 30 minutes then bake at 200C/400F for 15-20 minutes.
