Wholemeal buns: the secret to make them fluffy and delicious!

We promise these will be the softest 100% whole wheat buns you've ever had – and they are easy to make with this complete step-by-step tutorial!
INGREDIENTS
375 g (13.2 oz) whole wheat flour;
125 g (4.4 oz) all-purpose flour;
12.5 g (0.4 oz) fresh yeast;
½ tsp salt;
½ tsp sugar;
350 ml (12.3 fl.oz) warm water.
METHOD
- Combine both types of flour with salt. Make a well in the center and pour some warm water into it. Add sugar and crumbled yeast into the water, whisk and leave to bubble up.
- Knead the dough until it is smooth and slightly sticky. Cover and set aside for around and hour.
- With oiled hands form the dough into a log on semolina sprinkled work surface. Cut the log into 9 pieces and roll each into a bun.
- Place buns on a parchment-covered baking sheet and spray with water. Top with sesame, oats, semolina or any other toppings of your choice (flour, poppy seeds etc.).
- Leave to rise for 30 minutes then bake at 200C/400F for 15-20 minutes.
