Blueberry and cheese brioche buns: fluffy and delicious!

INGREDIENTS
For dough:
370g (3 cups) of All-purpose flour
50g (1/4 cup) of Sugar
180ml (3/4 cup) of Milk
12g of Dry yeast
12g (1/2 tbsp) of Honey
2 Egg yolks
6g (1 tsp) of Salt
6g (1 tsp) of Salt
60g (1/4 cup) of Butter
For filling:
260g (1 1/4 cups) of Cream cheese
260g (1 1/4 cups) of Cream cheese
60g (1/4 cup) of Sugar
20g (2 3/4 tbsp) of Cornstarch
Lemon (zest)
Egg for egg wash
Blueberries
Powdered sugar
METHOD
1. In a bowl add the flour, sugar, milk, yeast, honey, and egg yolks and mix. Add the salt and start with kneading. Gradually add the butter and let the dough absorb completely. Knead to create smooth and compact dough. Cover with cling film and let it rise for 90 minutes, or until is double in volume.
2. After time has elapsed cut the dough into 9 pieces and form the balls. Transfer them to the baking tray covered with parchment paper and cover with cloth. Let them rise for 40 minutes.
3. In a bowl add the cream cheese, sugar, cornstarch, and lemon (zest) and mix with a spatula to combine. Transfer to the piping bag.
4. After 40 minutes press a glass cup into the center of each dough ball to create an indentation.
5. Fill the buns with the prepared filling and arrange a couple of blueberries on top. Bake in oven at 180°C/360°F for 25 minutes.
6. Serve cheesecake buns to the serving dish and decorate with powdered sugar.
