Paradise cookies: beautiful to see, delicious to eat!

These delicious, fluffy cream cookies melt in your mouth and have the most delightful flavor; perfectly sweet with a nice tang from the cream cheese and a hint of orange!

INGREDIENTS

For the cookies:

320g (2 ½ cups) all-purpose flour;

120g (½ cup) sugar;

2 eggs;

1 orange (zest);

130g (½ cup) butter, softened.

For the cream:

250ml (1 cup) full-fat cream;

150g (⅔ cup) mascarpone;

2 tbsp (15 g) powdered sugar;

1 orange (zest).

METHOD

Preheat the oven to 180C/350F. Line two baking sheets with parchment.
Beat softened butter with sugar until creamy. Add orange zest and two eggs. Beat until smooth then combine with flour.
Knead the dough until it comes together, then wrap in plastic and let sit in the fridge for 1 hour.
Meanwhile, whip full-fat cream with powdered sugar and zest.
Combine cream and mascarpone together.
Roll out the pastry to 2-3 mm thickness. Cut out circles and transfer them onto a baking sheet.
Bake for 10 minutes, leave to cool down and sandwich a dollop of cream in-between two cookies.
