Breakfast cookies: a beautiful and delicious recipe to try!

A super simple recipe to make a special breakfast in a few steps:
INGREDIENTS
2 eggs
70g (1/3 cup) sugar
120ml (1/2 cup) vegetable oil
5ml (1 tsp) orange extract
8g (1 tbsp) cornstarch
300g (1 3/4 cup) flour
8g (1 1/2 tsp) baking powder
Powdered sugar (for decoration)
Apricot jam (for decoration)
METHOD
- In a bowl whisk eggs with sugar.
Add vegetable oil and orange extract and whisk until smooth. - Stir in cornstarch and gradually add flour and baking powder.
- Mix the dough with a spatula. Then continue to knead it with your hands until you receive an elastic dough.
- Transfer the dough to the working surface, and divide it into 2 parts.
- Form an oval shape cookie from each part of the dough.
- Arrange cookies on a baking tray and cut diagonal lines in one direction and then in the other, to create a diamond pattern on each cookie.
- Bake at 180C/360F for 25-30 minutes.
- Decorate with powdered sugar and apricot jam. Slice and enjoy!
