Breakfast cookies: a beautiful and delicious recipe to try!

A super simple recipe to make a special breakfast in a few steps:
 
INGREDIENTS
2 eggs
70g (1/3 cup) sugar
120ml (1/2 cup) vegetable oil
5ml (1 tsp) orange extract
8g (1 tbsp) cornstarch
300g (1 3/4 cup) flour
8g (1 1/2 tsp) baking powder
Powdered sugar (for decoration)
Apricot jam (for decoration)

METHOD
  1. In a bowl whisk eggs with sugar.
    Add vegetable oil and orange extract and whisk until smooth.
  2. Stir in cornstarch and gradually add flour and baking powder.
  3. Mix the dough with a spatula. Then continue to knead it with your hands until you receive an elastic dough.
  4. Transfer the dough to the working surface, and divide it into 2 parts.
  5. Form an oval shape cookie from each part of the dough.
  6. Arrange cookies on a baking tray and cut diagonal lines in one direction and then in the other, to create a diamond pattern on each cookie.
  7. Bake at 180C/360F for 25-30 minutes.
  8. Decorate with powdered sugar and apricot jam. Slice and enjoy!
