Veggie rose tart: an easy idea with an incredible result!

Have you ever tried to roll a strip of carrot? The result will leave you speechless! INGREDIENTS
1 roll shortcrust pastry
400g ricotta cheese
1 egg
Salt
80g parmesan
Pepper
zucchini
carrots
Olive oil to taste
DIRECTIONS
Unfold a shortcrust pastry sheet over a 26cm tart pan. Poke the base with a fork. Mix ricotta, egg, grated parmesan cheese, salt, and pepper together. Spread the ricotta mixture on top of the tart base. Slice strips of zucchini and carrots length-wise. Roll 4 slices of a vegetable to make a rose shape. Arrange roses over the filling. Brush olive oil on top of the vegetables and bake for about 50 minutes.
