VEGGIE PIE: super EASY and DELICIOUS! 🥕

INGREDIENTS
1 roll of puff pastry
2 carrots
1 bell pepper
1 zucchini
1 shallot
Extra virgin olive oil
100g of frozen peas
10 cherry tomatoes
Salt
Pepper
100g of cheese
Basil
4 eggs
50g (1/2 cup) of parmesan
Salt
Pepper
150ml (3/4 cup) of milk
METHOD
1. Wash, clean, and dice the carrots, zucchini, peppers, and shallot.
2. In a pan add the extra virgin olive oil and shallot. Fry until translucent, add the carrots, zucchini, pepper, frozen peas, cherry tomatoes, salt, and pepper, and cook for about 10-15 minutes on low heat. Remove from the heat and transfer to the bowl. Let it cool.
3. In a bowl add the eggs, parmesan, salt, pepper, and milk and mix to combine.
4. In a bowl with vegetables add the cheese, basil, and eggs mixture and mix to combine.
5. Place the puff pastry on the baking dish (24cm - baking dish size) and pour the mixture.
6. Seal the edges and transfer the veggie cake to the oven. Bake at 190°C/374°F for 40 minutes.
7. Serve the cake on a serving dish, cut a slice, and enjoy.
