VEGGIE STRUDEL: the quick and tasty autumn recipe! π

INGREDIENTS
1 zucchini
1 eggplant
1 bell pepper
Olive oil
1 onion
Salt
1 roll of puff pastry
Breadcrumbs
150g of cheese
1 egg for brushing
Sesame seeds
METHOD
1. Wash and cut the zucchini, eggplant, and pepper into small pieces.
2. In a pan add the olive and onion and cook until translucent. Add the vegetables, mix well, and let cook until vegetables become very soft. Remove from the heat and let it cool.
3. Unroll the puff pastry on a working surface and sprinkle with breadcrumbs in the middle. Add the prepared mixture and add the cheese on top.
4. Close the roll, wrapping the filling well, and sealing the edges. Brush with egg and sprinkle with sesame seeds.
5. Make the 4 cuts with the knife and transfer the veggie strudel to the oven. Bake at 180Β°C/360Β°F for 35 minutes.
6. Cut the veggie strudel into pieces and serve.
