Veggie meatloaf: no meat, easy and quick to make!

It tastes incredible and it’s super easy to make!
INGREDIENTS
3 slices of bread
80g Parmesan cheese
breadcrumbs, as needed
400g mixed vegetables
1 egg
2 tsp olive oil
basil
salt
pepper
provola cheese

DIRECTIONS
1. Cook the vegetables in a pan with some olive oil, then let them cool.
2. Combine the vegetables with the Parmesan cheese, breadcrumbs, egg, olive oil and crumbled slices of bread.
3. The mixture should be soft and should hold together without crumbling.
4. Shape the meatloaf filling it with cheese. You could add some ham to make it even tastier!
5. Bake at 180°C for 40 minutes and serve warm.
