Air fryer potato frittata: Delicious and easy to make!

INGREDIENTS (for 2 servings)
350g of potatoes
1 onion
Extra virgin olive oil
Salt, to taste
4 eggs
40g (⅓ cup) of grated provola cheese
 
METHOD
1. Peel the potatoes and slice them fairly thinly (but not too thin).
2. Place the potatoes in a bowl and season with olive oil and salt.
3. Transfer them to the air fryer basket and cook for 10–15 minutes at 180°C (360°F), shaking or stirring occasionally. You can add the sliced onion at this stage.
4. In a bowl, crack the eggs, add salt and grated provola cheese, and whisk everything together.
5. Add the cooked potatoes to the egg mixture and combine. Pour the mixture into a baking dish suitable for the air fryer.
6. Cook for about 20 minutes at 140°C (285°F), then serve the frittata warm.
