MUD CAKE: the super delicious chocolate cake!

INGREDIENTS (22cm mold size)
For the cake:
210g dark chocolate
260g (1 1/4 cups) butter
3g (1 tbsp) instant coffee
Vanilla extract
260g (1 1/4 cups) sugar
3 eggs
110ml (1/2 cup) buttermilk
230g (2 cups) all-purpose flour
35g (1/4 cup) cocoa powder
10g (3/4 tbsp) baking powder
For covering:
240ml (1 cup) fresh cream
240g dark chocolate
METHOD
1. Melt the dark chocolate in a bain-marie (double boiler). Then, add the butter and stir to melt it. Add the instant coffee and vanilla extract and mix to combine. Remove from the heat and let it cool slightly.
2. Pour the chocolate mixture into a mixing bowl, then add the sugar, eggs, buttermilk, and mix with an electric mixer.
3. Sift the flour, cocoa powder, and baking powder, then mix all the ingredients well with a spatula to obtain a smooth, lump-free mixture.
4. Pour the mixture into the cake mold (22cm mold size) lined with parchment paper and transfer to the oven. Bake at 160°C/320°F for 60 minutes.
5. Meanwhile, prepare the ganache by heating the fresh cream in a saucepan. When it is almost boiling, add the dark chocolate and whisk to combine until smooth. Let it cool for a while.
6. Cover the top part of the cake with the prepared chocolate ganache. Cut a slice and serve.
