MANDARIN CAKE: let yourself be won over by its aroma!

INGREDIENTS
2 eggs
160g (3/4 cup) of sugar
Zest of 2 mandarins
Juice of 2 mandarins
60g of butter
260g (2 cups) of all-purpose flour
16g (1 tbsp) of baking powder
160ml (3/4 cup) of milk
 
For decoration:
Powdered sugar
 
METHOD
1. In a bowl, whisk the eggs and sugar with an electric mixer until fluffy. Add the mandarin zest and juice, butter, flour, baking powder, and milk, and mix until smooth and lump-free.
2. Pour the batter into a 22cm cake mold and level the surface. Bake at 180°C / 360°F for 35 minutes.
3. Transfer the cake to a serving dish and sprinkle with powdered sugar. Cut into slices and serve.
