Golden crust potato and onion pie!

INGREDIENTS (for a 20cm cake pan)
1 roll of puff pastry
600g of potatoes
2 onions
100g of parmesan cheese
60ml of milk
2 eggs
1 tsp of marjoram
Salt and pepper to taste
Olive oil to taste
Rosemary leaves for decoration to taste
METHOD
1. Boil the potatoes in water and let them cool.
2. Slice the onions and cook them in a pan with oil, salt, and pepper for about 10 minutes, stirring constantly, until they soften. Let them cool.
3. In a large bowl, add half of the previously peeled potatoes.
4. Mash them with a fork until you get a puree.
5. Add the eggs, Parmesan cheese, milk, salt, pepper, and marjoram. Stir until you have a smooth mixture.
6. Finally, add the cooled onions.
7. Roll out the puff pastry and line the cake pan, pressing the dough along the sides using the provided parchment paper.
8. Pour and level the filling into the crust.
9. Slice the remaining potatoes and arrange them over the filling.
10. Drizzle with olive oil and fold the excess pastry edges over.
11. Bake at 180°C for about 45 minutes, or until golden brown.
