Veggies muffin: fluffy, easy and so delicious!

Ready in 30 minutes, they will be a hit! 

INGREDIENTS
 2 eggs;
 ½ cup zucchini, cut into cubes;
 ½ cup canned red beans, drained;
 ½ cup canned corn, drained;
 1 tsp salt;
 1 tsp ground black pepper;
 1 tsp garlic powder;
 1 tsp dried herbs;
 1 cup shredded cheese; 
 1 cup milk;
 2 cups flour; 
 3 tsp baking powder;
 2 tbsp vegetable oil.
 
  1. METHOD
    Preheat oven to 200C/400F. Grease a muffin tin for 12 muffins.
  2.  To start the batter whisk dry ingredients: flour; baking powder and spices together. Separately combine liquids: milk, eggs and oil. 
    Add liquids into dry mixture and mix until smooth batter forms (do not overmix!). Add zucchini, corn and beans.
  3.  Pour the batter into each muffin tin cup filling it 2/3 way up.
  4.  Bake for 25 minutes and leave to cool down until warm before serving.
