Fried tagliatelle: the italian recipe of one of the best Carnival sweets!

INGREDIENTS
3 eggs

300g flour
1 tbsp sugar
1 tsp dry yeast
1 pinch of salt
2 tbsp vegetable oil
Filling:
1 tbsp sugar
1 tsp dry yeast
1 pinch of salt
2 tbsp vegetable oil
Filling:
50g sugar
2 lemon zest + juice
2 lemon zest + juice
METHOD
Place the flour on the table. In the center, add beaten eggs, vegetable oil, a pinch of salt, 1 tbsp sugar and 1 tsp yeast.
Mix well, first with a fork, and then continue mixing with your hands, until you make thick dough.
Let rest for 30 minutes, covered with a kitchen towel.
Roll the dough thinly, sprinkle with sugar and lemon zest.
Drizzle with lemon juice (press directly from lemon) and roll the dough (as for tagliatelle).
Cut the rolls 5mm thick. Fry them in hot oil.
