GLUTEN-FREE YOGURT POUND CAKE: soft, light and fragrant!

INGREDIENTS
3 eggs
210g (1 cup) sugar
240g (1 cup) lactose-free yogurt
130ml (1/2 cup) rice oil
110g (1 cup) potato starch
260g (2 cups) rice flour
17g (1 tbsp) baking powder
For decoration:
Powdered sugar
METHOD
1. In a bowl, add the eggs and sugar and beat with an electric mixer until light and fluffy.
2. Add the lactose-free yogurt, rice oil, potato starch, rice flour, and baking powder, and continue mixing until you obtain a smooth, lump-free batter.
3. Pour the mixture into a loaf pan (25 × 11 cm / 10 × 4.5 inches) and transfer to the oven. Bake at 180 °C / 360 °F for 45 minutes.
4. Serve the cake on a serving dish, dust with powdered sugar, slice, and enjoy.
