MINT CAKE: soft and fragrant!

INGREDIENTS (for a 20cm cake pan)
4 eggs
150g (3/4 cup) sugar
100ml (1/2 cup) vegetable oil
125g (1/2 cup) plain yogurt
250ml (1 cup) mint syrup
250g (2 cups) all-purpose flour
50g (1/3 cup) potato starch
2 tsp baking powder
50g (1/2 cup) shredded coconut
A pinch of salt
150g (3/4 cup) sugar
100ml (1/2 cup) vegetable oil
125g (1/2 cup) plain yogurt
250ml (1 cup) mint syrup
250g (2 cups) all-purpose flour
50g (1/3 cup) potato starch
2 tsp baking powder
50g (1/2 cup) shredded coconut
A pinch of salt
For dusting:
Powdered sugar, as needed
METHOD
1. In a large bowl, add the eggs and sugar.
2. Beat with an electric mixer for a few minutes until the mixture becomes tall and pale.
3. Add the vegetable oil, plain yogurt, and mint syrup, and mix again until smooth and homogeneous.
4. Add the all-purpose flour, potato starch, and baking powder.
5. Mix until the batter is completely lump-free.
6. Finally, add the shredded coconut and a pinch of salt.
7. Pour the batter into a cake pan lined with parchment paper.
8. Bake at 180°C (350°F) for about 45 minutes.
