Mint cookies: quick and easy to prepare!

Just blend sugar and mint leaves, the result will leave you speechless!

INGREDIENTS
20 mint leaves
100g (1/2 cup) sugar
1 egg
100g (1/3 cup + 2 tbsp) butter
100g (1/2 cup + 3 tbsp) 00 flour
100g (1/2 cup + 3 tbsp) almond flour
1 tsp baking powder

METHOD
  1. In a bowl add the mint leaves, sugar and blend with the immersion blender.
  2. Add the egg, butter and blend it again. At the end add the 00 flour, almond flour, baking powder and mix with the spoon until all combined well.
  3. Take a spoonful of the mixture and create the balls from the mixture.
  4. Add the cookies into the baking tray and bake at 180 ° C for 15 minutes.
