Mint cookies: quick and easy to prepare!

Just blend sugar and mint leaves, the result will leave you speechless!
INGREDIENTS

20 mint leaves
100g (1/2 cup) sugar
1 egg
100g (1/3 cup + 2 tbsp) butter
100g (1/2 cup + 3 tbsp) 00 flour
100g (1/2 cup + 3 tbsp) almond flour
1 tsp baking powder
METHOD
- In a bowl add the mint leaves, sugar and blend with the immersion blender.
- Add the egg, butter and blend it again. At the end add the 00 flour, almond flour, baking powder and mix with the spoon until all combined well.
- Take a spoonful of the mixture and create the balls from the mixture.
- Add the cookies into the baking tray and bake at 180 ° C for 15 minutes.
