Lemon cookies: tasty and easy to prepare!

These cookies are so flavorful and easy to make!
INGREDIENTS
2 eggs;
60g (½ cup) sugar;
50ml (3 tbsp) lemon juice;
30ml (2 tbsp) vegetable oil;
½ lemon (zest);
1 tsp (5 g) baking powder;
210g (1 ⅔ cups) all-purpose flour;
50g (¼ cup) cornstarch;
120ml (½ cup) milk;
Sugar for sprinkling.
60g (½ cup) sugar;
50ml (3 tbsp) lemon juice;
30ml (2 tbsp) vegetable oil;
½ lemon (zest);
1 tsp (5 g) baking powder;
210g (1 ⅔ cups) all-purpose flour;
50g (¼ cup) cornstarch;
120ml (½ cup) milk;
Sugar for sprinkling.
METHOD
- Whisk eggs with sugar, lemon zest, vegetable oil, and lemon juice.
- Separately combine flour, cornstarch, and baking powder.
- Add dry ingredients into the egg mixture and mix to combine.
- Set the dough aside in the fridge for 30 minutes.
- Cut the chilled dough into pieces and roll it into balls.
- Place cookies onto a baking sheet and bake for 15 minutes at 180°C/350°F.
- Let the cookies cool down, then dip them in milk and cover in sugar.
