Lemon cookies: soft, simple and delicious!

INGREDIENTS
200g butter, softened
60 g (1/2 cup) icing sugar
5 g (1 tsp) vanilla sugar
4 g (2 tsp) lemon zest
pinch of salt
2 egg yolks
300 g (10 oz) corn starch
5 g (1 tsp) baking powder
Powdered sugar (for serving)

METHOD
  1. In a bowl combine softened butter, icing sugar, vanilla sugar, and a pinch of salt.
  2. Stir in egg yolks and mix with a spatula until homogeneous.
  3. Add cornstarch and baking powder and mix well.
  4. Continue to mix cookie dough with your hands until the dough becomes smooth
  5. Preheat the oven to 170C/340F. Line a baking tray with parchment paper.
  6. Make 12 small balls from the obtained dough and flatten them a bit.
  7. Arrange cookies on the baking tray and bake for 20 minutes on the upper rack. Then place the baking tray on the lower rack and bake for 5-7 minutes more.
  8. Serve sprinkled with powdered sugar. Enjoy!
