Lemon cookies: soft, simple and delicious!

INGREDIENTS
200g butter, softened
60 g (1/2 cup) icing sugar
5 g (1 tsp) vanilla sugar
4 g (2 tsp) lemon zest
pinch of salt
2 egg yolks
300 g (10 oz) corn starch
5 g (1 tsp) baking powder
Powdered sugar (for serving)
METHOD
- In a bowl combine softened butter, icing sugar, vanilla sugar, and a pinch of salt.
- Stir in egg yolks and mix with a spatula until homogeneous.
- Add cornstarch and baking powder and mix well.
- Continue to mix cookie dough with your hands until the dough becomes smooth
- Preheat the oven to 170C/340F. Line a baking tray with parchment paper.
- Make 12 small balls from the obtained dough and flatten them a bit.
- Arrange cookies on the baking tray and bake for 20 minutes on the upper rack. Then place the baking tray on the lower rack and bake for 5-7 minutes more.
- Serve sprinkled with powdered sugar. Enjoy!
