INGREDIENTS

2 eggs
80g (1/2 cup) of sugar
A pinch of salt
1 tsp of vanilla essence
330g (2 3/4 cups) of all-purpose flour
10g (3/4 tbsp) of baking powder
100ml (1/2 cup) of vegetable oil
40g (1/4 cup) of chocolate sprinkles
150g of melted chocolate

METHOD

In a bowl add the eggs, sugar, salt, and vanilla, and mix until the sugar dissolve. Add the flour, baking powder, and vegetable oil, and mix until a dough is created.
Add the chocolate sprinkles and mix with a spatula until all is well combined.
With the hands roll out the dough to form the loaf and divide it into 8 equal parts. Roll out and tin each piece and split it into 4 parts.
Transfer the cookies to the baking tray covered with parchment paper and bake in the oven at 170°C/338°F for 30 minutes.
Dip both sides of each cookie into the melted chocolate and set aside for the chocolate to firm.
