LINZER COOKIES: CRUMBLY and DELICIOUS! πŸ˜‹

INGREDIENTS
320g (3 1/4 cups) of ground hazelnuts
140g (3/4 cup) of brown sugar
110g (1 cup) of powdered sugar
Lemon (zest)
Cinnamon
Cloves
320g (2 3/4 cups) of all-purpose flour
270g (1 3/4 cups) of butter
1 egg
1 egg yolk
Β 
Raspberry jam
Powdered sugar

METHOD
1. In a mixing bowl, add the ground hazelnuts, brown sugar, powdered sugar, lemon (zest), cinnamon, cloves and mix. Add the egg and egg yolk and mix with your fingers to dissolve it. When dough starts to form knead to obtain a compact dough. Wrap the dough in cling film and transfer it to the fridge for 2 hours.
2. After time has elapsed, transfer the dough to the working surface and roll out the dough to 3-4 mm thick. Cut out the shapes of the cookies with the cookie cutter.
3. Transfer the cookies to the baking tray covered with parchment paper. Bake in oven at 180Β°C/360Β°F 12 min.
4. Let the cookies cool spread the raspberry jam on non-pierce bases and cover with the shape. Serve them and decorate them with powdered sugar.
