PAD THAI: the tasty and fragrant traditional Taiwanese dish!

INGREDIENTS
310g rice noodles
Vegetable oil
90g peanuts
3 cloves of garlic
50g fish paste
50g tamarind juice
30g soy sauce
Parsley
Chives
160g bean sprouts
210g black tiger prawns
METHOD
1. Place the rice noodles in a bowl and pour hot water over them. Let soak for 15 minutes, then drain.
2. In a wok, heat some vegetable oil and add the peanuts. Toast them for a few minutes, then remove and set aside.
3. In the same wok, add the garlic and the drained rice noodles. Stir-fry for a few minutes. Add the fish paste, tamarind juice, soy sauce, and a little water, then mix well. Add the parsley and chives and stir again.
4. Add the bean sprouts and stir-fry over high heat to combine all the ingredients.
5. Move the noodles to one side of the wok to create space, then add the prawns. Pour a little soy sauce over them and cook for a few minutes, just until pink.
6. Add the toasted peanuts and mix everything well. Serve the Pad Thai on a serving dish and enjoy.
