Flourless almond cake: soft, moist crumb and gluten free!

This is the easiest almond cake with just 4 main ingredients. You won’t believe it is a grain free and gluten free cake recipe!
INGREDIENTS
200g almond
150g sugar
130g potato starch
3 eggs
120g butter
custard cream
almonds flakes
METHOD
1. In a large bowl, beat together with the egg yolks, lemon zest, sugar and butter until smooth.
2. Add the almond mixture to the egg yolk mixture and beat until well combined.
3. With an electric mixer beat the egg whites, starting on low speed and gradually increasing the speed.
4. Fold the whipped egg whites into the batter, a large scoopful at a time.
5. Bake at 180° for 45 minutes.
6. Decorate with custard cream and almonds flakes.
