Almond fluffy cake: soft and moist like you’ve never had before!

INGREDIENTS
260g (2 cups) flour
16g baking powder
a pinch of Salt
3 eggs
50ml (0.2 cup) orange juice
200g (1 cup) sugar
100ml (0.45 cup) oil
Cream:
1 egg
50g (0.5 cup) starch
Peel of one orange
100ml (0.4 cup) orange juice
100g (0.5 cup) sugar
250ml (1 cup) milk
100g (0.4 cup) butter
20g (4 tbsp) sliced almond
METHOD
- Prepare the cream. Combine the ingredients and cook over low heat, stirring constantly. After the mixture thickens, allow the cream to cool.
- Combine eggs and sugar, whisk until you get a fine frothy mixture. Add oil, salt, orange juice. Add baking powder to the flour and add to the previously prepared mixture.
- Pour the mixture into a 22 or 24 cm mold, lined with baking paper.
- When the cream has cooled, pour it into a dressing bag and apply over the dough, then sprinkle with sliced almonds. Bake at 180 degrees for 50 minutes, after 30 minutes put the foil over the cake.
