ALMOND CAKE: soft and fragrant, you'll only need a few ingredients!

INGREDIENTS (20cm cake pan)
4 eggs
200g sugar (1 cup)
200g butter (¾ cup + 2 tbsp)
150g all-purpose flour (1 ¼ cups)
100g ground almonds (1 cup)
2 tsp baking powder
1 tsp vanilla extract

METHOD
1. Finely grind the almonds using a food processor.
2. In a large bowl, add the softened butter and sugar.
3. Beat with an electric mixer until smooth and creamy.
4. Add the eggs and vanilla extract, then mix again until the batter is smooth.
5. Add the flour, baking powder, and ground almonds, mixing until the batter is lump-free.
6. Pour and level the batter into a cake pan lined with parchment paper.
7. Bake in a preheated oven at 180°C / 350°F for about 45 minutes.
8. Let the cake cool, then dust with powdered sugar before serving.
