GLUTEN-FREE MUFFINS: so SIMPLE and FRAGRANT you can make them in just a few minutes!

INGREDIENTS
2 egg whites
2 egg yolks
130g (3/4 cup) of sugar
12g (1 tbsp) of vanilla sugar
110ml (1/2 cup) of milk
60ml (1/4 cup) of rice oil
210g (1 3/4 cup) of rice flour
60g (1/2 cup) of potato starch
10g (3/4 tbsp) of baking powder
Powdered sugar
METHOD
1. Pour the egg whites into the bowl and mix with the electric mixer until stiff.
2. In another bowl add the egg yolks, sugar, and vanilla sugar and mix with the electric mixer to dissolve the sugar. Add the milk, rice oil, rice flour, potato starch, and baking powder to obtain no lump mixture.
3. Place the paper cups in the muffin pan and pour in the mixture with the help of an ice cream scoop. Bake at 180°C/360°F for 20 minutes.
4. Transfer muffins to a serving dish and decorate with powdered sugar. Serve and enjoy.
