POTATO BASKETS: for an inviting appetizer or a delicious second course!

INGREDIENTS
600g of potatoes
2 eggs
40g (1/3 cup) of all-purpose flour
Salt (to taste)
Parsley (chopped)
Tartar sauce (to fill the baskets)
Capers to serve

METHOD
1. Wash, peel, and grate the potatoes using a large-hole grater.
2. In a bowl, combine the grated potatoes with the eggs, flour, salt, and parsley. Mix well until you get a uniform mixture.
3. Lightly grease a muffin tin and divide the mixture into the molds. Press the potato mixture with your fingers to form small baskets with a slightly concave shape.
4. Preheat the oven to 200°C (390°F). Bake for about 20 minutes, or until the edges turn golden brown.
5. Let the potato baskets cool slightly before carefully removing them from the molds.
6. Fill the baskets with your favorite mousse or sauce—I used tartar sauce. Decorate with capers and parsley leaves.
