CODFISH BALLS: a delicious and tasty fish-based second course!

INGREDIENTS
500g cod
350g boiled potatoes
1 egg
1 garlic clove
40g grated parmesan
70g breadcrumbs
Parsley, to taste
1/2 tsp salt
1/3 tsp pepper
METHOD
1. Pat the cod fillets dry with kitchen paper. Cut the fillets into pieces.
2. Transfer the cod pieces to a food processor. Add the chopped garlic, parsley, egg, and grated Parmesan. Blend everything until smooth.
3. Mix the cod mixture with the mashed potatoes. Add salt and pepper to taste.
4. Shape the mixture into balls and dip them into the breadcrumbs.
5. Fry the balls in hot oil until golden brown.
