Crispy roasted potatoes, topped with melting cheese and plenty of crisp bacon are a great side dish for any meal.

INGREDIENTS

8 medium potatoes, cut into wedges;
5 slices bacon;
2-3 rosemary sprigs;
30ml (2 tbsp) olive oil;
salt.

METHOD

Place sliced potatoes into heavily salted water for 20 minutes.
Drain potatoes and pat them dry with paper towels.
Transfer potatoes into a baking pan, top with rosemary, and bake at 180C/350F for 60 minutes.
Add sliced bacon on top, cook for 10 minutes. Top with cheese and bake for 10 minutes more.
